Sweet Potato Waffles

These grain-free waffles are a fun way to get a serving of vegetables in at breakfast. With the mild hint of spices, your toddler is sure to ask for more. Cut into bite size pieces and let them feed themselves, they will be so proud!

What you’ll need

  • 1 cooked sweet potato
  • 1 very ripe banana
  • 6 eggs
  • 1 tsp cinnamon
  • 1 tsp turmeric
  • Dash of dried/ground ginger

How to make it

  1. Place all ingredients in large bowl and mix with hand blender until smooth with very little lumps.
  2. Cook on a waffle maker (about 5 minutes per waffle).
  3. Top with favorite fruit such as sliced bananas and blueberries.
