Soba Noodles with Sunflower Seed Butter

Homemade Toddler Meal

This simple soba noodle dish is a great meal that’s quick to prepare. The sunflower butter provides a variety of nutrients, including protein and vitamin E. The bell peppers contain vitamins A, C, and E. This recipe has a larger yield and is great to share with the whole family.

What you’ll need

  • 8 oz. soba noodles, cooked and drained
  • ¼ red pepper, cut into small strips
  • ¼ orange pepper, cut into small strips
  • ¼ yellow pepper, cut into small strips
  • ¼ cup plus 2 tablespoons sunflower seed butter
  • 1 Tbsp. sesame oil

How to make it:

  1. In a large mixing bowl, combine the noodles and bell pepper strips
  2. In a small saucepan over low heat, warm the sunflower seed butter and the sesame oil, sitting occasionally, until heated through. (alternatively, combine the sunflower seed butter and sesame oil in a microwave-safe bowl and microwave at full power until heated through, 10-20 seconds).  
  3. Pour the mixture over the noodles and bell peppers and toss gently until coated.
  4. Serve warm or at room temperature. Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 2 months.
