What you'll need
1/2 cup dry red lentils
1 cup mixed vegetables of choice (e.g. green beans, peas, carrots, cauliflower - can be frozen or fresh)
1/4-1/2 tsp ground cumin
1/4-1/2 tsp ground coriander
1/4-1/2 tsp ground turmeric
1/4-1/2 tsp garam masala
1/2 cup cooked quinoa
How to make it
- In a large pot over medium heat, add lentils, vegetables, all spices and 1 cup water.
- Bring to a boil. Then cover and simmer on low for 20-30 minutes until lentils and vegetables are cooked through and soft
- Serve on top of quinoa.
