Lentil Stew

A hearty and flavorful combination of lentils, quinoa, spices and veggies that’s sure to please your little one’s palate.

What you’ll need

  • 1/2 cup dry red lentils
  • 1 cup mixed vegetables of choice (e.g. green beans, peas, carrots, cauliflower - can be frozen or fresh)
  • 1/4-1/2 tsp ground cumin
  • 1/4-1/2 tsp ground coriander
  • 1/4-1/2 tsp ground turmeric
  • 1/4-1/2 tsp garam masala
  • 1/2 cup cooked quinoa

How to make it

  1. In a large pot over medium heat, add lentils, vegetables, all spices and 1 cup water.
  2. Bring to a boil. Then cover and simmer on low for 20-30 minutes until lentils and vegetables are cooked through and soft
  3. Serve on top of quinoa.
